Vodka is a standard appetizer in restaurants that offer varied dishes due to the mix of ethnic groups found in the vast Russian territory.
We also find a great diversity of teas, inherited from the occupation of the Mongols, which are usually accompanied by pastries or "blinis" (small pancakes made with fresh yeast usually used to serve caviar, after being smeared with fresh cream).
Another important dish is Borche (or borscht or borshtch) which is a soup made from beets and fresh cream. Can be served hot or cold.
Caviar or ikroy are also typical of the region because of their abundant existence in the Caspian Sea. And consequently the river fish.
Stuffed potatoes (Kartoshka) are also heavily consumed. It is a cheaper option and is often sold in stalls around the sights.
