Preparation

Clean the turkey. Crush the garlic cloves with salt, pepper, cumin and oregano. Add the juice of the sour orange and brush the turkey inside and out with this mojo. Top it with the onion cut into wheels and leave it in this marinade for at least a couple of hours. Better if it's from the day before.

Wash the beans and soak them for a couple of hours. Cook them in the same water as soaking with the chili pepper until they soften. Fry the two slices of bacon cut into small pieces and in the same fat the minced onion, the crushed garlic and then the minced pepper remain. Add this sauce to the beans when they are very soft. Add the washed rice and spices, as well as the fried bacon bits. Let it cook over medium heat until the rice is dry but the grain is a little hard.

Stuff the turkey (without stuffing it completely), seal it and roast it at 325ºF for about two and a half hours, occasionally brushing it with butter, oil or shortening so that it is not too dry.
