Preparation

Peel the papaya, wash and remove the seeds. Weigh and use the same amount of sugar. Scald with boiling water and cut thinly. Mix with the sugar, the grated lemon peel and a little water to dissolve the sugar. It takes to the fire and it boils until it makes road in the bottom of the pot. Stored in bowls.
