Preparation

Beat the egg yolks with the sugar until you get a whitish cream. Then mix the crushed almond and mix well. Wrap the egg whites in this mixture, but gently.
Put this dough in a greased form and lined with parchment paper, also greased. Bake at 160ºC for 50 minutes. Unmold warm and decorate with sugar pestle.
