Mix all the ingredients well and if necessary add a little milk so that the mixture has a smooth consistency.

It can also be found written as clootie dumpling. cloot in Scottish English means rag.
This pudding is served on New Years Eve. Leftovers from this traditional pudding can be eaten as a cake or can be fried with the bacon for breakfast.

Ingredients

  • 8 servings
  • 450gr of flour
  • 150gr fresh breadcrumbs
  • 225gr of sultanas
  • 225gr of currants
  • 100gr of raisins
  • 100gr of lemon peel and apple cut and mixed
  • 225gr of fine black sugar
  • 225gr of black molasses
  • 225gr of fat well cut
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 teaspoons ground spices
  • 1 teaspoon of baking powder
  • ½ teaspoon of salt
  • 2 grated apples
  • 2 medium carrots, grated
  • 2 eggs
  • grated lemon peel and juice of 1 lemon
  • a bit of milk
