Preparation

put the ham with the fat side down in a baking dish over moderate heat for half an hour, remove. remove almost all the water, turn the ham fat side up. cut into strips, rub with salt and pepper and spread the butter. distribute the bay leaves and return to a moderate oven for three hours.
If the crust has not browned, put the oven on the strongest and leave to brown with the oven door ajar. take out and reserve.
deglaze the tray with a little water and bind with the cornstarch dissolved in water. let it cook a little and strain.
Cook the red cabbage cut in julienne together with the diced apples. Sauté it with the butter and add the vinegar, the currant and season with salt and pepper.
serve in a separate dish.
