mix three fresh eggs with salt and sugar, add 1/2 glass of milk, stir well. then add flour and obtain a homogeneous dough. then add milk and mix. heat a medium-sized frying pan well, add oil, with a ladle pour the dough over the pan, moving it so that the dough covers its bottom. When one side of the blin is well browned, turn it over and fry it on the other side. place the fried blinis one on top of the other on a flat plate. Serve the blinis with jam, heavy cream or it can also be filled with meat, cottage cheese, cheese or caviar. the first blin always goes wrong.
