Cuenca
Cuenca, capital of the Province with the same name is located in the interior of Spain and situated to the northeast of the region of Castile-La Mancha, is a fortified historical town tense been awarded the World Heritage by UNESCO.
In this city where the Festival of Religious Music takes place during the Easter week, I have been considered an International Tourist Interest Festival.
The province has wide contrasting landscapes, from the typical plains associated with La Mancha, to the most mountainous landscape in the entire region of Castilla-La Mancha, and can be clearly seen in the areas of Alcarria Conquense, La Mancha, Manchuela and La Serrania , as well as having a nature reserve.
Cuenca has some of the oldest examples of rock art in Spain, part of the Mediterranean Basin, in the Iberian Peninsula, and have been issued the designation of World Heritage by UNESCO.

The historic fortified city of Cuenca, formed by the area within the walls and the neighborhoods of El Castillo, San Antón and Los tiradores, extend along the edge of the cliffs, in the heart of the mountains Serrania de Cuenca. The cathedral, the hanging houses and the cobblestone streets will delight even the most weary traveler.

Gastronomy
This is an austere region, with the main specialties being roasted lamb and Manchego cheese. Traditional dishes include those typically made by shepherds like porridge, wheat stew, garlic soups and morteruelo.
High-quality vegetable products from this region, gave it the name of the "pantry of Madrid" with large eggplant plantations in Almagro and mushrooms in Villanueva de la Jara. Pisto Manchego is made from some of these quality vegetables.
Saffron de La Mancha is known for its quality.
This community has a tradition of hunting dishes such as pickled partridge (pickled sauce), roasted rabbit with garlic and venison.
The best known of the local sweets is the marzipan made in Toledo. There are also cakes, breads made from oil and honey-flavored cakes.
